
The PM300 cheese care machine has been specially developed for two-sided cheese care. When the cheese wheels are maturing on stainless steel racks, both the top and bottom surfaces of the wheels can be brushed in a single care cycle. This allows care intervals to be extended, and a uniform rind quality can be achieved more easily than with single-sided cheese care.
Thanks to the double-sided brush arrangement, the top, bottom and rind sides of the cheese wheels are brushed all round in a single operation. Several adjustable nozzles moisten the brushes with lubricating water and ensure optimum surface moisture on the brushes. The PM300 cheese care machine is suitable for hard and sliced cheese wheels from Ø100 mm to Ø300 mm. Special soft brush sets for various soft cheese varieties are available.
The machine has two vertical lubrication stations, in which two cheeses can be treated simultaneously. The vertical treatment allows excess lubricating water to drain away easily from the cheese surface. The machine is characterised by its simple operation, ergonomic working height and good manoeuvrability.
Compared to manual cheese care, the work can be carried out much more quickly and with less physical strain. The brushing process and the supply of brine are carried out automatically by the machine. Thanks to mechanical care, the cheese wheels are brushed evenly, enabling the formation of a uniform rind. Thanks to the high pump capacity with adjustable brine flow, the machine is also perfectly suited for washing cheese wheels.
The high-quality machine housing, made from V4A-grade stainless steel, is hygienically designed and easy to clean.
The maintenance stations are easily accessible; all parts relevant to cleaning, such as brushes, etc., can be removed without tools for easy cleaning. The lubricating water lines are fully hygienic and can be rinsed.
The compact chassis sits on four large-diameter wheels, allowing the machine to be pushed over thresholds with ease.
The machine is equipped with a modern, completely maintenance-free drive system. All bearings and pivot points are maintenance-free, allowing the operator to focus entirely on the cheese.
Each cheese wheel is fed into the machine individually and can be placed on the machine’s storage rack. The operator transfers the cheese wheels alternately to one of the two treatment stations and, once the desired treatment time has elapsed, can remove the treated cheese from the treatment stations and return it to the cheese maturing rack.
