Cheese care is one of the most strenuous tasks of the dairyman. Initially, the cheese wheels, which can weigh up to 40kg, have to be turned every 2 days and rubbed with brine. Regular and thorough brushing of the wheel is essential for the cheese to develop a good rind and flavour. In the past, this work was done by hand using a hand brush, a bucket of brine and a lot of muscle power. Today, cheese care machines or, in smaller businesses, cheese smearing tables make this arduous work easier.
